How Did Sarada Acquire the Mangekyo Sharingan?
The Mangekyo Sharingan is not easily activated. In fact, it was explained in Naruto that the only way to unlock the Mangekyo Sharingan is when the user experiences great trauma, most likely from the death of a loved one.
Some Uchiha clan members usually kill their loved ones to activate this ability, but the case is different for Sarada.
After Boruto lost his eye, Kawaki attempted to escape the village.
Eida then grabbed this opportunity to use Omnipotence, an ability that allows the user to acquire any wish; specifically, to swap Kawaki and Boruto.
After this, it was revealed that Boruto (who was Kawaki at the time) killed Naruto.
The news of Naruto's passing took a toll on Sarada since Naruto had been her father figure and idol.
Since she was unaffected by Omnipotence, Sarada knew who truly committed the crime.
But this was not the reason her Mangekyo Sharingan was activated.
After Naruto supposedly died, Sasuke was blinded by Eida’s power.
As a result, he started seeking revenge against Boruto. Sarada’s negative reaction to her father triggered her to unlock her Mangekyo Sharingan.
Her ability was unlocked as she knew Boruto could die at the hands of her own father. This proves Sarada’s affection, love, and loyalty toward Boruto.

Sarada’s (Possible) Mangekyo Sharingan Abilities Explained
After Sarada awakened her Mangekyo Sharingan, there was no follow-up on what new abilities she acquired.
All we know is that it has a sun-shaped pattern (since every user has a unique design).
Since Boruto will enter a four-year time skip, it is expected that Sarada will already have the ability under control when the series comes back.
Many fans are expecting to see new abilities aside from the known skills Mangekyo Sharingan users have:
Amaterasu
Fans expect that Sarada will be able to use Amaterasu, the highest level of Fire Release.
Although we cannot assume that every Mangekyo Sharingan user can use Amaterasu, Sasuke and Itachi were able to use this ability, so Sarada might be able to acquire it as well.
Susanoo
Meanwhile, Susanoo is the ultimate power of the Mangekyo Sharingan, so Sarada will most likely have it as well.
This ability allows the user to release a giant humanoid made of chakra. Moreover, it can attack and defend with maximum capabilities.
Eternal Mangekyo Sharingan
Lastly, fans expect her to unlock the Eternal Mangekyo Sharingan. This power is triggered once the user starts losing their eyesight through the overuse of Mangekyo Sharingan.
Some believe that Sarada can activate this power-up once she gets Sasuke’s eyes -- if she does in the future.
There is also a chance that Sarada will not lose her eyesight as Sakura is an expert in medical ninjutsu.
Surely, she will do something about the matter, or perhaps, Sarada will inherit some of her mother’s abilities as well.
