The One Piece manga is released weekly, albeit with periodic breaks. It is a key part of the Weekly Shonen Jump magazine and very rarely takes more than one week out unless pre-planned.

The online version of Weekly Shonen Jump’s chapters is usually available from midnight on Monday in Japan. In regions such as North America and Europe, that translates to in the morning or afternoon on Sunday.
The release date is designed to minimise spoilers and enable fans across the world to enjoy the series. However, there are usually spoilers for manga chapters available a few days before the official release.

One Piece is published in Japan in Weekly Shonen Jump, where it has appeared since its first chapter way back in 1997.
