Which Shows Should You Watch Before Ahsoka?
Hardcore fans who aren't content with watching a few episodes here and there should know that there are two essential shows for Ahsoka's character:
1) Clone Wars
2) Rebels
The former is a seven-season series that follows Ahsoka from the beginning of her new life as Anakin's Padawan, up until the devastating Order 66.
While the show isn't only about Ahsoka, she's a central character, not only as Anakin's foil but also in her own right.
In the latter, Ahsoka isn't the main character but her arc is really important and it sets up the plot for her own show.

The Clone Wars tv series is arguably the most important for Ahsoka's early development.

In Season 7, she returns as an independent Jedi who plays a role in the siege of Mandalore and refuses to fight her former Clone friends even when Order 66 is in effect.
Ahsoka's Tales of the Jedi Episodes
Tales of the Jedi is a series of animated shorts, some of which recount Ahsoka's early life. Disney recommends:

Ahsoka's Rebels Episodes
Rebels is arguably one of the best Star Wars stories, with great plot and characterizations. The episodes that don't involve Ahsoka are equally enjoyable but, for our purposes, here are the Ahsoka episodes you should check out:

The series finale is a direct prelude to the Ahsoka show.
Ahsoka's Mandalorian Episodes
The one Mandalorian episode you need to watch before Ahsoka is Season 2's Episode 5: The Jedi.
In it, Ahsoka meets the titular Mandalorian and helps him with the child Grogu.
Due to the series' episodic format, however, Ahsoka doesn't become a regular.
Ahsoka's Book of Boba Fett Episodes
The Book of Boba Fett isn't many people's favorite Star Wars. However, one episode is of interest to fans of Ahsoka, as well as Mando, and Grogu.
During that episode, Ahsoka serves as a mediator between the Mandalorian Din Djarin and Luke Skywalker regarding the future of baby Grogu.
If you don't want to watch all of The Book of Boba Fett you don't have to. Episode 6: From the Desert Comes A Stranger is all you need.
