One of the key things Rick Grimes missed out on was the ring Father Gabriel was supposed to give him for his wedding with Michonne. That ring has been in his friend's pockets the entire time, so why did Jadis keep the ring until her last breath? Here's what happened.

How Long Has Jadis Kept the Ring in The Walking Dead Franchise?
The Ones Who Live episode 5 takes us to a flashback of the last moment Father Gabriel shared with Jadis.
The flashback brings us to two years ago and shows how Gabriel found a lost wedding ring in the dirt by the bridge he came across once.
He hands over the said ring to Jadis and tells him he would want to have the ring wed Rick Grimes and Michonne together when the time comes.
"It's a symbol of faith, of love," Gabriel puts the ring in Jadis' hand, "Maybe it will give you something you need. Giving it to you is giving me something that I need."
And since then, Jadis has kept the ring throughout these years. Why is that?
Well, apart from keeping their "loose end" relationship close to her heart all this time, perhaps deep down, Jadis indeed used the ring to remind her of her old friend/lover.
Not to mention, possibly looking for an opportunity to follow through with her promise to Gabriel of giving the ring to Rick. Now that her time has come, she decides to do what's right before her deathbed.

Jadis Gives the Ring To Its Rightful Owner On Her Deathbed
On Jadis' deathbed, she pulls the wedding ring out from her pocket.
"On the bridge, you told Gabriel you wanted to marry [Michonne]," With a smile, Jadis hands over the ring from her bloodied hands to Rick, "He found this and he wanted to give it to you."
Despite the moment calling for a formal proposal from Rick to Michonne, it just didn't feel right.
Considering that one of the longest-running characters in The Walking Dead franchise is on her last wits, the only thing left to do was to kill her before she could kill them. Alas, putting an end to her with a Walker's bite to the neck.
