Deadpool 2: Vanessa Originally had a Different Fate

Though Deadpool is known for his satire with most superhero movie tropes, Deadpool 2 actually gave him a serious arc by killing off Morena Baccarin's character Vanessa. Though she gets saved by a time-travelling Wade in the end, it's revealed by the writers that she was supposed to stay dead in the film.

Talking to CBR, co-writer Rhett Reese explained:

"We originally did not save her. It was interesting — we thought we might have to save her with the time machine, because the audience would be mad at us, but they were accepting of her being dead."

Writer Paul Wernick also had this to say about bringing Vanessa back to life in the last minute:

"It was a difficult decision, but one, story-wise, that we felt we had to make… and then we got to have our cake and eat it too by bringing her back to life at the very end."

Though Vanessa dying does allow for Wade to have his catharsis in the film, I think that making her live is kind of the point of Wade's character in the superhero universe; Deadpool is there to make fun of everything, and he can do so because he has no consequences to face, what being immortal and all.

I'm sure that Vanessa's death brings something interesting to Wade's character, but they could just retcon everything again by the time Deadpool 3 roles in. To be honest, I didn't even care that much when she died the first time.
